Ohsawa Organic Nama Shoyu is unpasteurized, enzyme- and lactobacillus-rich, and aged two years in cedar kegs. The spring water used to make Ohsawa Organic Nama Shoyu comes from a small Japanese mountain village called Kamiizumisui ("God Spring").
